Special request from Alabama

Excerpts from recent emails from Paula:

6 June:  "First...yes, we'd like some zucchini!!"

8 June am:  "I'm serious about the zucchini...Tom's favorite.  PLEASE post a couple zucchini recipes."

8 June pm:  "Ok, Tom said, 'How do you make zucchini fritters?  Will you ask her?'"

Here goes:

Coarsely grate about 1 pound zucchini using largest holes on grater.  Sprinkle with salt and let stand 10 minutes.  Drain in colander, then wrap in several layers of paper towels.  Mix well with 1/2 cup coarsely grated parmesan cheese, 2 lightly beaten eggs, 1/4 cup flour, 1 teaspoon salt, freshly ground pepper to taste.  Optional: add 1 tablespoon chiffonade of basil or other fresh herb.  Scoop about 1/4 cup and flatten in hot nonstick skillet with 3-4 tablespoons vegetable oil.  Add a little more flour if mixture gets watery.  Serve warm with a little sour cream or warm marinara sauce.

  1. I too love zucchini so can't wait to try this recipe (will need though to look up meaning of chiffonnade). I've just come back from visiting Italy with a friend and did my best to eat ravioli and gelato at every opportunity. I concluded we in Oz make pasta dishes as good as any Italian but the gelato was to die for.

  2. Marion, right? Add about 1/4 cup minced onion to the mixture. I didn't do the chiffonade part when I made it, but it seems like a good idea. Italy! What fun! Italy is on my "go there" list.

  3. Yes, that's right Arlete. We're travelling by car to North Queensland to Darren's place in a couple of weeks (a family wedding). It takes 2 - 2 1/2 days 8 hrs a day to get there. But we will do a little exploring on the way as well (a detour to see some platypus in the wild). Darren and Haruka have entertained recently a swiss couple off a catamaran they met a few times on their Pacific crossing. The couple are presently moored in Cairns Marina. Unfortunately it's been unseasonally wet up there (as indeed it was in Italy as well). ............... Marion
